Question: Does this work with Arduino?
Answer: Yes it can, with some external components. It just acts like a simple switch. You could connect it to a 3.3V potential on one of its wire and an arduino input on the other wire. You should connect a 10 Kohms pull down resistor between this used input and the ground to force the input to zero when the switch is open.
Question: Can this be used with potable water ? Is it food grade?
Answer: Yes, it is completely sealed in plastic. I see no reason for it not to be safe for potable water. I am using it to monitor RO water levels in a storage tank I drink from.
Question: Can these be used with a gauge to tell how much water is in a tank? How would this sensor know how much water is in the tank?
Answer: No, they are used to determine when water is at a certain level. The float only travels about an inch and the sensor is like an on/off switch. When water is high enough the float moves up and it turns on. You could put more than one in a tank at different levels and determine the amount of water based on.
Question: What is the gauge of the wire? Single or multiple strands?
Answer: I didn’t check the gauge. These are intended for control signals- not high power switching. They work well.
